Flaky Jamaican lamb patties!
After sooo many years of eating patties, I still can’t decide which part I like most the pastry or the meat???

I absolutely love fried dumplings, it’s a treat my mother used to cook every Friday with fried fish. I’ve made this crispy snack my own, by adding a likkle sugar in the mixing stage, to give it a slight sweet taste.

Ahhh smell the Jerk aroma…summer is not summer in my house unless we get out the Jerk pan, invite some friends over and cook up some finger licking Jerk chicken!



Succulent Caribbean fried fish with onions and hot n sweet peppers , steamed fish, boiled fish any type of fish “mon” mi just love fish. I confess…I’m one of those fish eaters, who can locate the fish bones (in my mouth). Whilst still eating and swallowing the meaty parts of the fish, and when I’m done I leave all the bones clean!!!



When I feel the flu coming on, the first thing I cook up is a hearty bowl of Caribbean chicken soup.
I make this soup every Saturday afternoon. I also experiment by changing the meat. One week I will use goat meat (mutton) the next week fish or beef. After one bowl of Caribbean soup and a glass of water, I never need anyting more to eat for the day, it just so nourishing and filling!



Sometimes I cook Ackee & saltfish for breakfast with fried dumplings, but mostly I prepare it for my families’ main meal. Ackee is one of my most favourite foods, so much so that I sometimes prepare it with ought the saltfish!
